Κέικ Λεμόνι (υγρό)

ΥΛΙΚΑ (για κανονική φόρμα κέικ)
300γρ βούτυρο μαλακωμένο
300γρ ζάχαρη κρυσταλλική
4 αυγά
ξύσμα δύο λεμονιών
300γρ αλεύρι που φουσκώνει μόνο του, κοσκινισμένο (ή αλεύρι για όλες τις χρήσεις με 1 κουταλάκι baking powder)
8 κουτ. σούπας γάλα
4 κουτ σούπας ζάχαρη
χυμός από δύο λεμόνια

ΕΚΤΕΛΕΣΗ
1. Προθερμάνετε το φούρνο στους 180 C.
2. Χτυπήστε καλά το βούτυρο με τη ζάχαρη μέχρι να αφρατέψουν.
3. Προσθέστε σταδιακά ένα ένα τα αβγά.
4. Έπειτα, προσθέστε το ξύσμα λεμονιού και το αλεύρι κοσκινισμένο. Προσθέστε 8 κουτάλια γάλα, μέχρι το μείγμα να γίνει παχύρρευστο.
5. Βάλτε το μείγμα σε μια βουτυρωμένη φόρμα 23 εκ και ψήστε για περίπου 30 λεπτά ή μέχρι να βγαίνει καθαρό το μαχαίρι.
6. Λίγο πριν βγάλετε το κέικ από το φούρνο προετοιμάστε το 'σιρόπι': ανακατέψτε τη ζάχαρη με το λεμόνι σε μέτρια φωτιά μέχρι να διαλυθεί τελείως. Με οδοντογλυφίδα τρυπήστε το κέικ παντού (μη φοβάστε οι τρύπες δε φαίνονται) και μετά με το κουτάλι χύστε το σιρόπι σιγά σιγά σε ολόκληρο το κέικ.
7. Περιμένετε να κρυώσει και βγάλτε το από τη φόρμα.
